Apple
The most storable fruit in a temperate garden — if you pick it at the right moment.

Picking
Lift and twist. If the apple comes away with the stalk attached and the flesh is not bruised, it is ready. If you have to pull, wait a week.
Storing
Only unblemished fruit stores. Wrap individually in paper, single layer, somewhere cool, dark and slightly humid. Check monthly — one rotting apple releases ethylene and takes the tray with it.
Varieties
Early varieties are for eating within days. Late varieties harden and sweeten in store, sometimes peaking in February.
